Variety File: Bring On The Color

Seeds By Design has four beet varieties, each one bringing something different to the table, so to speak. Chioggia is an Italian heirloom that matures in 60 days. Its alternating red and white concentric rings make it a specialty item.
Another red variety is Detroit Dark Red. This beet matures in 50 days, is globe shaped, and has blood-red 3-inch solid roots.
Going from red to gold-yellow when cooked is Golden Detroit. This variety matures in 65 days and is suited to the California climate but is well adapted for many climates.
Changing the color scheme is Albino, a round white beet with a delicious sweet flavor and smooth, bolt-resistant roots. This variety is said to be good for pickling and cooking.
